When I was a kid, one of the fun activities with my grandma was cooking with her. She was a very special and fun person and she cooked the most delicious cheese spaghetti. She prepared it with a rich, crumbled, fresh Greek feta cheese and it was my favorite dish as a kid.
A few years ago, when I started cooking with my two sons, I was so happy to discover that they are also passionate about cooking and they loved this creamy pasta recipe. My sons loved the melted feta cheese sauce in the spaghetti and we prepared it even with other kinds of pasta that we had available at home. We even improved it by adding a grated Pecorino-Romano cheese or Parmigiano on top of the pasta before serving. We called it 'Love Sauce' because we had to cook it very slowly, with lots of cooking passion and with lots of LOVE… Four generations of pasta cooking and LOVE in our family!
Another enhancement that we added to my grandma's recipe, and my kids learned to pay attention to, is the look and presentation of the dish. We practiced together how to garnish the pasta dish--to perfection--just before we serve it so that we make it look appetizing, yummy, and attractive.
My two sons started to cook this pasta sauce for their friends and since then, every time we have their friends coming for a play-date or a sleep-over, the favorite dish to be served is grandma's secret recipe, al dente pasta with our signature creamy cheese LOVE sauce.
