Affairs to Remember Caterers, Atlanta’s first Zero Waste Zones caterer, today announced that it is offering its clients new sophisticated, flavorful entrees that are free of the top eight food allergens—milk, egg, peanut, tree nuts, fish, shellfish, soy, and wheat.
Affairs to Remember, one of the largest privately held off-premise luxury caterers in the United States and one of Atlanta’s award-winning preeminent catering and event design organizations, has long been actively addressing the multitude of dietary sensitivities and restrictions, biological and cultural.
The development of the new food allergen-free menu items is a logical progression in that course—and aligns with meeting the needs of a growing population of American citizens with food allergies. In fact, the Centers for Disease Control and Prevention (CDC) reports a 20% increase during 1997-2007 of food allergies in children.

A self-affirmed lover of pasta, Chef Mitchell noted her excitement for their new Grilled Zucchini and Yellow Squash ‘Pappardelle’ with basil-infused rustic pomodoro. The dish mitigates dealing with the possibility of gluten-free pasta breakdown. One of Affairs’ goals is to avoid singling out a few guests at an event by serving typical banquet-style allergen-free dishes that are not up to Affairs’ standards. The new dishes speak to luxury as do the grand venues where they cater.
Offering a Top 8 allergen-free luxury option is believed to be one of the first, particularly in the Atlanta area, available from a full-service caterer. “We’ve catered to guests with various allergies and can easily create something on-the-fly, but in the catering world, that’s not always the best possible outcome. Off-premise catering is considerably different from dining at a restaurant with a vast on-premise pantry. This offering is meant to provide our clients and their guests with options they often didn’t know they had—that are now standard items—and to ensure that guests with food allergies enjoy their meals as much as the guest seated next to them,” said Chef Mitchell.
Chef Ahmad Nourzad, Executive Chef at Affairs to Remember Caterers, said, “We’ve conducted first-hand research throughout the foodservice industry to discover what options are currently presented to persons with food allergies. Very often it’s not something that was created with culinary flare and purpose; it’s not something that would appeal to a guest attending a special event. Putting ourselves in their shoes was the impetus to create these new dishes, which are not only beautiful and filling, they’re over-the-top delicious as well.”
Both chefs are forthcoming—and Affairs to Remember service staff are trained—in alerting guests who indicate they have a food allergy that Affairs to Remember is not an allergen-free facility, thus cannot guarantee zero cross-contamination—an admonition necessary for those with extremely sensitive allergies.
Chef Nourzad added, “We continue to educate ourselves and apply what we learn to our menus. We’ve already created menus entirely vegetarian or gluten-free—for hundreds of guests at a time! And we’re working on the development of more food allergen-free menu items all the time.
